有很多人都担心食品经过辐照后,营养会不会有损失。虽然说食品经辐照处理后,其中的大量营养素和微量营养素都会受到一定的影响,但是,总的来说,只要在规定的使用剂量下。辐照就不会使食品营养质量有显著的下降。相比其它杀菌保鲜方式而言,对营养的破坏反而更少。其实,辐照对食品营养质量的影响,是因为它引起了食品内部各成分的变化而造成的,主要表现在以下几个方面:
1. 对食品中水的影响
水分子对辐照很敏感,而食品中的水溶性维生素以及生物细胞中各种具有生物化学活性的物质,均是以水溶性的状态存在的。这些物质在经过射线照射后,生化活性会降低,在代谢过程中的损伤会扩大,从而细胞的正常生活机能就被破坏了。
2. 对蛋白质的影响
蛋白质分子在受到辐照时内部的结构会遭到破坏,从而物理性质会发生改变。在低剂量下辐照,主要发生特异蛋白质的抗原性变化。而高剂量辐照则可能引起蛋白质伸直、凝聚、伸展甚至使分子断裂并使氨基酸分裂出来。蛋白质中有一些含硫氨基酸对辐照比较敏感,在辐照作用下会裂解形成苯、苯酚和含硫化合物,从而产生难闻的气味,如鸡蛋蛋白。它是一种对辐照非常敏感的蛋白质,如果对鸡蛋进行辐照,就会使其蛋白变得稀薄,并变成水溶液的状态,这对鸡蛋的质量有很大的影响。再如,在对小麦进行低剂量辐照时,未发现蛋白质有明显的变化;但是一旦剂量增加,小麦内部就会发生蛋白质解聚,只不过,这种变化会给小麦质量带来有利的影响。
3.对碳水化合物的影响
一般来说,在辐照射线的作用下,碳水化合物是相当稳定的,只有在大剂量照射下才会发生分解等现象。
4.对脂类的影响
在有氧条件下,且较高的辐照剂量时,脂类一般会出现过氧化作用,很容易发生酸败和产生异味。
5.对微量营养成分的影响
维生素是食品中重要的微量营养成分。在辐照过程中,食品的维生素会受到破坏,而且不同的维生素对辐照的敏感性不同。在水溶性维生素中,对辐照的敏感性最强的是维生素C,但是在冷冻状态下对食品进行辐照可以保存维生素C。根据水果或蔬菜被辐照的剂量、空气中暴露程度和温度的不同,维生素C的损失也不同,但是用于抑制发芽和灭菌的低剂量辐照也会使维生素C损失1%~20%。除了维生素C,其他水溶性维生素对辐照也很敏感,但也要根据各类条件不同,损失的比例也不同。而在辐照过程中,B族维生素的损失比加热食品时的损失小。脂溶性维生素对辐照也十分敏感,尤其是维生素E和维生素K,其中维生素K最敏感。
6.对酶的影响
酶是一种蛋白质,所以辐照对它的影响与蛋白质相似。但是,酶对辐照的敏感性也会由于其他物质的存在而减弱,同时也会受到外界条件的影响。例如,温度升高时,酶对辐照的敏感性会增强;辐照干燥胰蛋白酶时,在有氧状态下胰蛋白酶极易被钝化,可能会形成过氧化物。由此看来,在食品体系中的酶很容易受到保护,所以辐照钝化酶时就需要相当大的剂量。
